Salmon Recipes
I think salmon is a great choice for those that are looking for a simple but great tasting seafood pasta dinner. Salmon in my opinion is the king of all fishes, for one it’s loaded with Omega-3 fatty acids which the American Heart Association recommends that people include at least two servings of fish per week, particularly fatty fish (such as salmon), in their diets plus it taste so good! So I decided to give away two of my favorite salmon dinner recipes that can serve up about two or four people at dinner. These recipes are great for a romantic dinner with your girlfriend or a quick meal that will satisfy a small family, and let’s not forget it’s healthy.
Angel Hair Pasta with Salmon and Vegetables:
6 to 8 leaves of spinach (optional)
Garlic salt
1 tsp. vegetable oil
¼ lb. salmon
1 tsp. butter
1 lb. angel hair pasta
Boil spinach in water with a dash of garlic salt and 1 teaspoon vegetable oil. Bake salmon with butter until pink. Cut into nickel size pieces. Cook angel hair pasta according to directions. Drain spinach. Toss pasta with spinach and salmon. Serves two.
Salmon Pasta Salad:
1 can (15 ½ oz.) salmon
8 oz. corkscrew pasta, cooked and cooled
4c. torn fresh spinach leaves
2 med. Tomatoes, cut in wedges
1/4c. chopped green onion
2 tbsp. chopped parsley
Salt and pepper for taste
Drain salmon and reserve 1 tablespoon liquid for dressing. Combine salmon, flaking as you toss, with spinach, onion, parsley and cooled paste. Combine all ingredients for herb dressing, including reserved salmon liquid, and beat with wire whisk to mix. Pour over salad ingredients and toss to coat. Serve and sprinkle with additional Parmesan if desired.
